A Duke Workday: Pouring Love into Food, One Meal at a Time
Meet Mark Mishalanie, Executive Chef and Menu Planning Specialist for Duke Dining

Each year, Duke Dining welcomes over 1,000 students to the Marketplace inside the Wall Center for Student Life for a Thanksgiving meal.
And Mark Mishalanie, Executive Chef and Menu Planning Specialist for Duke Dining, is in charge of making sure that everything goes smoothly.
"The planning for this meal started months ago,” Mishalanie said. The Duke Dining team must prepare hundreds of pounds of food and make all the holiday favorites such as turkey, ham and sweet potato casserole.
For Mishalanie, this meal carries extra importance.
"The moment that the students step into our building, they see that something special is happening," he said. "And so from the menu design to the way that we pour love into the food to the way that we transform the Marketplace, it makes it all worthwhile."
